A Little Bundle of ………

Well. Life certainly has changed in the Picky Pants household. I am no longer Preggy Pants and now we have a little Punkie Pants! Picky Pants is still … well, Picky.

All jokes aside, we had our baby girl, Hudson, October 26th. She’s perfect and we’re so in love!

Here’s a totally obnoxious picture of Hudson … and her bow … and her black cat outfit for Halloween. She’ll grow into the headband… right?!?!? Lol’s!

While I labored it out in the hospital for 19 hours (whew!) a friend bought Hudson’s Halloween outfit for us. We were hoping to have her by Halloween and everyone knew it. I want to have Halloween or Fall themed birthday parties for her every year! I’m too superstitious to have bought a costume before she arrived so in between contractions Picky Pants showed me the picture of this outfit from a friend … I think it got me through the next 5 hours of labor successfully. She will love everything pumpkin/Fall/Halloween!!!

The day I went into labor I made some Apple Carrot muffins to pass the time and to have a healthy snack on hand. These muffins are very … Fall-y. So, of course I love them.

APPLE-CARROT MUFFINS

2 C All Purpose Flour
2 TSP Baking Soda
1/2 tsp. Salt

2 tsp. Ground Cinnamon

1 C Sugar

2 C finely grated carrots (I used food processor and pulsed until I thought I got ‘em shredded)

1 large tart green apple, peeled, cored and grated (again, food processor)

1/2 C Raisins

1/2 C Sliced Almonds, or chopped Pecans or Walnuts (I omitted these)

1/2 C Coconut

3 Eggs, slightly beaten

2/3 C. Veg Oil

2 TSP. Vanilla Extract

1. Combine first five ingredients in a large bowl. Stir in carrot, apple raisins, nuts and coconut.
2. Make a well in the center of the mix. Combine eggs, oil and vanilla. Add to dry ingredients stirring until just moistened.
3. Spoon into greased muffin pans, filling 2/3 full.
Bake at 350 for 20 minutes. Makes 2 Dozen!
