Fiesta Soup

Packing for a trip. Essentials below:

1. Unmentionables
2. Passport
3. Bathing suit
4. Book
5. Lara Bars (at least 10)
6. Batteries
7. Coffee Creamer
8. Hair straightener
9. Sunscreen
10.Flip Flops with a wedge

A friend of mine always packs the box of individual coffee creamers in her suitcase. She is BRILLIANT. I now copy her. And have happy coffee hour wherever I am. Yay me.

Absolutely loved this soup! I mixed cilantro, lime and a little salt with the sour cream- perfecto.

Fiesta Soup
1 lb. lean ground beef
1 yellow onion
16 oz canned tomato sauce
16 oz canned kidney beans (rinsed)
16 oz canned pinto beans (rinsed)
16 oz canned yellow corn (undrained)
16 oz canned diced tomatoes
1 3 oz. can of diced green chilies
one packet of dry ranch dressing
1 packet of taco seasoning mix

1. Chop onion and saute in a little olive oil. Add ground beef. Drain.
2. In large sauce pot add all ingredients, heat to boil and then simmer 30 minutes. Serve with sour cream and cheddar cheese.
